I've been collecting a huge HD of reference material to paintover. Drawing is fun again and you learn a lot. People who preach fundies are crabs, to get good you need to learn to have fun with it.

Are you sure you aren't aiming for the wrong industry here? There is already a whole industry for what you seem to enjoy doing. I think it's called touch-up artist. They are tasked by magazines to photoshop blemishes from models and celebrities, make photos of food items look really appetizing etc and you indeed don't need the fundamentals for that.

It's something you have to actively practice. Imagine things in your mind, rotate them, then try to draw them. Use reference only to correct errors.
