They're capable off-roaders that get overhyped a lot because of their military origins. The newer generations have gotten bigger, heavier and more road friendly to appeal to everyday buyers but you can still do lot of fun stuff with them.
The older Jeeps are lighter and simpler, but they're also slower and less comfortable.

Think of it like this. If a car company could build a totally sketchy off road street legal car. By using 40% less materials. They'd do it in a heart beat because it's 40% cheaper now!

Old Military Jeeps and trucks had soft tops and fold down windshields partly to make them easier to fit in cargo ships and train cars for shipping and partly for ease of mounting weapons and equipment. When they started hitting the civilian market the fold down windshield was retained as a legacy feature.
A side benefit was also that the old Jeeps had shitty hand powered windshield wipers, so when it was muddy or rainy it easier to just drive with the windshield down and live with being wet.

Yes. You have to unbolt the roll cage though. And get a strap to hold the windshield to the rubber stoppers on the hood. Also just watch YouTube. The new JL Wrangler also has a cold down windshield.
