Because the villain doesn't give fucks about heroic morality. Far easier to let someone do the heavy lifting for you and then take em out when they are weak. See in FF4 during the Sealed Cave segment where you had to go through countless amounts of Phoenix Downs and Ethers and then fight an annoying as fuck boss, only to have Kain snatch it from you via Golbez control. Same with FF7 and the Black Materia, Sephiroth couldn't get it due to the puzzle, so he simply let the heroes solve it for him. Even FF6 did it with the Esper slaughter at Thamasa where their whole plan was to deceive the protagonists into making peace with them to lure them into the open so Magicite could be collected and reduced opposition keeping them away from the sealed gate.

Even SaGa 2 did this with Apollo using the characters you met as hostages so he can collect all the MAGI/Relics in your possession.

Why do the work when your opponent can do it for you?

A bloody nasty example is in Lunar 2. Leo is the leader of Althena's Guard, has his own amphibious craft, has no fear of Lucia despite her overwhelming power, and is painted as a badass throughout the game.

His stats are -completely identical to Hiro-, including his experience. Because of Hiro's extremely slow leveling rate, he'll join your party for the first time at around level 12 or 13. A kid who started his adventure a week ago, if that, is on-par with the fuck-mothering leader of the Goddess' personal protection squad.

Also, dead party members not gaining experience. They contributed as well, assholes.

The other characters Magic should be diminished and not as strong as his, when he lived in Zeal and drew magic straight from Lavos... he should be stronger.

She's referred to Aeris FF7 and FFT. FFT got an update called War of the Lions and was named Aerith in it, and the FF7 Remake has her named Aerith by default. In all other appearances/references in official SE games she is named or referred to as Aerith.
This isn't an isolated case either, see Chupon/Ultros vs. Typhoon/Orthros.
