First off, Griffith would continue to rise in the ranks of Nobility, though not in the same way as before. With Guts gone, that means no more assassinations, but he probably wouldn't need any more anyway.
The King's health declined because of the stress he went through over his daughter, so he'd probably hang around for at least a few more years, maybe even as far as a decade longer.
It wasn't just lusting after his daughter, but Griffith "taking what was his" that set him off. So if he "gives" Charlotte to Griffith, as a father to his new son-in-law, that might avoid that mental hurdle.

Guts' path would largely be the same for a while. It's questionable if he would meet Silat since that tournament was set up to recruit people to hunt down the renegade Hawks, but his skills would be at that level anyway.
He might find his way back into Midland or Chuder to compete in a tournament, seeking strong opponents, and could catch news of the Hawks, or them of him, since it's not like there would be many men the size of a barn door swinging a sword as tall as himself.
