The most famous recent example of this is probably Chandler with a wild cobra. And he was spectacularly lucky to walk away from that with just part of his finger missing, thanks to his crew and being in a country where they actually have the required antivenin in a few hospitals. So yeah I think it's safe to assume you can desensitize venomous snakes to people like you can with a constrictor type. It's just that one tiny fuck up can have life-changing consequences, which is why keepers with a brain don't go in with their bare mitts.
