Can I create a business in the US where my identity is completely private? I want to pay taxes and I'm fine with the government knowing who I am, but I don't want people to know I run a certain kind of business if I make it. Is this possible?

You can pay llc attorneys a grand per year and they will open a llc for you with post address and all, some states have a private company register so no names
is there a tier list for what states are best/easiest for it? what things are worth considering besides different tax rates?

There are plenty of businesses that bury that behind layers, or you could even hire a law firm to be your agent, but at some point you are discoverable.There are a bunch of gun parts shops on the web, for the ones oriented toward the 3D printing gun crowd, which don't list any contact information on their websites and use anonymous registration to hide website ownership from immediate view, but even with those I turned up the owner of one by searching for its name in state business records (they forgot to pay their annual registration fees and are operating an expired LLC now, lel).
