why do people fixate on the negatives of technology when we're likely to have incredible AI health tech in our lifetimes?

Because we’re in a K shaped economy where increases in quality of life that come from technology only impact the rich. For everyone else technology actively makes their life worse, getting rid of their jobs and increasing the ways they can be controlled and abused.
