Reduce for 1-1.5 hours. Adjust salt and other shit to taste. Have on low heat, scrape bottom every 8-10 minutes. Put a fuck load on the dough. It's an umami bomb.

All the toppings kinda melt into the centre as the crust rises, so its good to use less sauce and toppings in the centre, otherwise it gets soggy.

70% hydration on italian 00. cold 24h poolish into cold 24h dough and then balling. the gluten is out of this world, stretching it is wholly effortless. great taste too. but the ball rise leaves a rather mediocre corniche.
cant say i care much, the main point is that the bottom is extremely thin without having to patch it up ten times during the stretch, and that its tasty ofc.

i use a ninja woodfire, 700f in 13min, by the time its done heating up ive taken everything out of the fridge and assembled a pie, from ball to toppings. the thin stone means i need to open the door after 2min so the top doesnt burn, but the 13min preheat are worth it.
i dont think anybody short of an amish family can justify 45min preheat.

How do you cook your pizzas?

I use my pitboss pellet grill, with a real pizza steel (3/8", steel plate not cast iron).
Remove the sear plate, crank it to 500f, its open flames on the bottom of the steel.

Heats up in less than 10 minutes, huge smoke flavor. Its very consistent heatwise unlike my old ooni or a brick oven.

I've done it both ways. I did it this way today because I was feeling jewish and only used one small can of tomatoes to make the sauce. I wouldn't have had enough to do it the other way.
