I regularly make a dish called kogel mogel. It's raw egg yolks, beaten up with sugar until it has a creamy consistency. You can also make a roux caramel, or a roux and mix in some chocolate.

You can add in some other flavours, some berries or whatever and it's really delicious, you don't even taste that it's egg. It's just like candy.

However, really really strangely, if I melt dark chocolate, anything over 65%, it makes the dish taste EXTREMELY eggy, to the point where it's almost nauseating. Even without the chocolate, just the egg yolk and the sugar, it doesn't have such an eggy aroma. But even if you load it with a bunch of sugars, spices and add fruits and whatever, if I use any dark chocolate it is overwhelmingly eggy.

What causes this effect?

I remember a wine aunt type family friend that made this for me once. except she called it gogel mogel. forgot about it until now so thanks for digging up some memories.
