Like most fine dining, there are diminishing returns on investment. I've had Michelin starred sushi and while it's good, I'm not sure I would pay that much for it ever again. A $150 omakase at your local nice sushi restaurant is more than enough, especially since so much of sushi comes down to quality of ingredients.

In my experience there's not much difference between the ultra high-end sushi and the mid-tier stuff you can find at a regular (but dedicated) sushi bar. They might have some fancy fish you can't normally get but for the typical offerings, well...there's an upper limit to just how good raw yellowfin tuna can taste.

Yes.
I went to Sushi Nomura in Taipei last year, it cost >$200usd for 14 nigiri and a few other dishes and it was well worth it imo. No other sushi I've had before or since even comes close.
It's not just higher quality fish, the seasoning of the rice was excellent, the other ingredients were also top notch and complimented each fish very well.
The most interesting was two different mackerel served one after the other. One was just raw with some sort of citrus, the next was lightly smoked with crispy skin and some sort of umami ingredient.
I was also served some nice miso soup before the sushi, and some tasty pumpkin mochi with hojicha for dessert. I also got a small dish in the middle of the sushi courses of steamed shrimp, lotus root, a light dashi, and a savory custard.
The green tea they served was really good as well.
