I've begun reading the Bread Baker's Apprentice and it's made me wonder, is all the artisan wanking over bread really justified, for what has essentially been peasant food for the longest time? I like a good loaf too but the way the author is so passionate about bread is both offputting and a little intimidating as a baking virgin
>>
>>20997299
You can say that about anything.
People say that about cooking in general desu, "it's just food". Even Olympic sports is the same, except you'd get laughed out of the room if you tried to claim it's a waste of time because "muh human spirit, muh limit surpassing" or something
Truth is humans are just bored so they find a hobby to "skill up" in, it doesn't have to have a purpose. Somehow everyone accepts the nature of this when it comes to gardening though...

hey, does anyone have a good recipe for brotchen. I work in aviation and german planes come in with bags of buns, recently found out its brotchen. is it just the egg white that separates it from a kaiser roll? this are basically flown in fresh as crew food and they are really good.
>>
I like kneading and dont know why others dont
Then again I also love leg day so maybe I'm just retarded

Yo dudes if I'm making this recipe
https://youtu.be/8H8NmrLkrcs?si=w2p8dGi1R188y3eB
could i make it in the morning and let it proof in the fridge until I'm ready to bake it in the afternoon?
>>
>>21004566
Morning to afternoon is tough to say, usually cold proofs go for like 12 hours, however this is normally only 45 minutes at room temp so I'd say ~6 hours in the fridge is likely going to be fine.
>>
>>21004690
Cool. It's for a dinner thing and i just don't want to be fucking around making bread with other people in the kitchen 2 hours before we eat so i want to make it ahead. Thanks for the advice anon.

>try to make rolls from recipe for bread machine
>3 cups bread flour to 1.25 of milk, plus yeast, sugar and salt and around 2 tablespoons of melted butter
>recipe says to run the dough cycle (mix, knead, rise) and then divide, roll, put in pans and let rise before baking
>open breadmaker after cycle finishes to find what can generously be described as a yeasty batter
>hydration so obscenely high I just threw the rest of my container of bread flour (2 or 3 cups??? idfk) into it, stirred it together, then threw it in the stand mixer, letting the dough hook beat the shit out of it for what must have been 10+ minutes, throwing in AP flour by the tablespoonful (and at least one fistful) until it finally comes together
>put it in an oiled bowl for a minute and work THAT in
>Dough just sucks it all up and refuses to get to anything further than "sticky/wet", let alone shiny or smooth
>try kneading it by hand, for some reason, which is mostly just throwing it into the counter and calling it a whore at this point
>try dividing it up but it's too sticky - even when oiled, rolls won't stay together
>finally say fuck it - smash it all back together, divide it (it's over a kilo of dough at this point), oil the fuck out of two pans and throw half into each
>Tell myself I'm gonna just throw them in the oven until they catch fire out of spite, because I'm resigned to using the rolls I got on clearance for dinner anyway and I'd rather have burnt bread in the trash than raw dough
>Come back after I've cooled off a bit to find that holy shit, the dough's actually risen
>pour some olive oil, italian seasoning and grated parm over them and throw them in the oven with the stuffing
>end up with what I can only describe as a white-trash focaccia made of some of the pillowiest bread I've ever had, everyone at dinner loves it

I already know I'm a dick-inhaling ultrafaggot and a retard but... someone who actually knows what they're doing - tell me what in the holy fuck happened here?

Eh it's a casual get-together with friends and I've been meaning to get better at making bread so this is the kick in the ass that i needed. I'll probably make a backup batch right before so we have extras or it'll be the only one if the cold proof doesn't work since i can't just leave it out on the counter for hours before baking.

What's a good detailed book with pictures and troubleshooting for a possible moron who tends to make dense breads? I want holes and pockets, not a damn brick.

Bros I did it, I finally made good bread, look at these little pussy poppers they came out perfectly. Its a thanksgiving miracle
Truthfully though it took 3 tries of these before I finally figured it out. First two batches were overbaked since they were near the bottom of the oven and the tops werent browning fast enough and not in a small enough pan so they didnt rise up like they shouldve. Moved the rack to the middle and put them in a cake pan and wa la. Never buying those hawaiian rolls again

Rolls were a little burnt and crusty. Little bit dry too but they were excellent dipped in bisto gravy. For a first attempt cooking bread ever they're not too bad.
