Realistically speaking, is sushi worth it from an energy perspective? A decent portion of nigiri sushi should be around 500-1000 grams of rice (like a dozen or two dozens of pieces). The rice alone should fulfill your minimum energy needs, if you're an average human.

You can make cheap sushi rolls outta anything. Most Japanese people aren't eating kingfish sashimi every time they eat sushi. More likely they are eating canned tuna, tofu or egg roll sushi. The cheap stuff.
Canned tuna + mayo maki rolls are authentic sushi. Costs like $2 to make 2 big rolls (16 pieces)

Okay then, maybe I overestimated the rice percentage, however, pic related is exactly 529g, the plastic container is just 18g. I only eat lunch (no dinner, no breakfast, no snacking) during the work week, and when I order two of these (so approx 1022g of sushi, rice + fish included), not only does my stomach feel fuller, I also have enough energy without feeling hungry at all. So it has to be at least 2000 kcal. If the rice is max 15*12=360g, then that provides approx 1.2*360*2=864 kcal. Does the fish really have enough calories to cover the rest? +let's say ~150-200kcal from the soy sauce (I think i's 100ml), so about 800-900 from the fish?

What makes something sushi? It's the rice. Sushi is sushi because of the vinegared and sweetened rice. If you want raw fish? It's sashimi, a type of sushi, however, you can cook a whole steak and put it on a pile of sushi rice and you have sushi. Make it out of whatever the fuck you want and, here's the kicker, if the fish was farm raised, you can eat it raw because it wasn't exposed to the parasites that ocean caught fish were.
To get ocean caught fish safe enough for sushi you gotta freeze it to a degree that pretty fucking insane to actually ensure parasite death.

But, I am getting off track, shove some sushi rice into a big Mac and you made sushi. So make whatever the fuck you want.

Sushi kind of isn't actually worth the effort for me anymore I used to make sushi regularly and with tinned tuna. but once I started learning how to make curries I wasn't going to waste that tuna. I still keep the sushi rice and nori stocked and in the cupboard but only break them out if I see avocados on special.

Sushi cooked with grilled mackerel is also delicious.
Fillet the mackerel and rub sugar all over it.
When it starts to get watery, rub salt all over it.
Then leave it overnight in the fridge.
Finally, rinse off the salt with water and grill the mackerel.
If you feel the fish is too salty, you can put it in water for an hour to remove the salt before grilling.
