Mother came round Saturday with some of her homemade Spaghetti Bolognaise. I added my homemade flatbreads to it and this was my very tasty Sunday dinner.

I like the variety of your plate. More like a grazing plate than a meal. You could easily make that last an hour. Its actually inspiring me to try my own 7/10

I had some baked chicken drumsticks. I usually fry drumsticks but I tried these in a new way and they were good. I dry brined them in S&P, garam masala, tomato powder, and carob powder. Then the sauce was coconut oil, red curry paste, coconut butter, yellow mustard, vinegar, aminos, cumin, garlic and onion powder, and a tapioca slurry to help it stick. The sauce wasn't as sticky as I wanted, but I did get a good caramelization on it in the broiler. Had 2 with a simple salad. It was p good.

I didn't take pictures because I can't stop the grey band. I don't know what I'm doing wrong when I cook steak, I even reverse seared it step by step, let it rest thoroughly, and whaddya know, grey band. Your pan probably needs to be hotter. You want to sear as quickly as possible before the meat below the surface starts to overcook, causing the grey band.

Fried low sodium spam until browned. Added in red beans, pickled pepperoncini, and a spoonful of homemade harissa then stirred to coat everything with the harissa. Then in with water and oatmeal, cooked while stirring until oatmeal was almost cooked, then cracked an egg on top, covered, and cooked just until whites were set and yolk was still runny. wa la

Set the oven to 275 with a probe in one steak, waited til it hit 110, hot pan on one side for a minute, flip, take off heat, add butter and baste, that's what I did. The butter was still cold when I threw it in. Maybe I'll try 250 next time. Those numbers are in freedomheit btw
Usually I just throw the meat in a hot pan with olive oil, flip after a few minutes, throw the butter and thyme and garlic at the end and baste off heat. The band was a lot greyer this time, trying the reverse sear for the first time. I don't have this problem at all on a grill but I want to master the pan steak because I like making pan sauce

You've gotta stir when the heat is high. This nearly got away from me. It's how you get dark coloring (not moving the pan) but it can scorch black and stick (not too much with these pans) and ruin everything.

The grease is the best part. I ate that seven hours ago and I'm only now starting to think about what to make next. Strangely, if I'd have eaten half that pile with an equal amount of rice I'd have been hungry again after 2 or 3 hours. But that's just me. I have no idea how it works and don't presume to tell others how to eat. I'd rather eat it with rice or noodles myself, obviously, but that did not work out even after years of trying. I'd rather be full and not think about food for long stretches than always be hungry and craving and have to limit my portions.

Trying to keep it organic high quality ingredients, my breading is half blended oats and half whole wheat flour. Pork chop and anson mills carolina gold rice.

Raised the pig myself on pasture and carolina gold rice is one of the most flavorful and delicious rices on earth. Looks plain, but this is a 9/10 dinner.
Some pickled veg would have made it a 10. Getting 20lbs of cabbage from the farmers market to make kraut with next saturday.

Correct. I do eat with fork in left hand. We can just say the picture got mirrored. My table was a bit cluttered also so I just slapped my cutlery down to complete the picture.

Look how juicy properly marbled pork is. Not raw either. Sous vide for like 3 hours at 135 while I was seperating cream. I made 2lbs of cultured butter today with it.

Got tired of making overnight oats so I looked up some recipies for oat muffins. First batch were great, put cinnamon brown sugar and dried cranberries in them, but what I meant to stretch out over a couple breakfasts vanished in a day because they hit the sweet spot too much.
Made some savory ones instead today with cubed ham, cheese and onions. Still good but just bland enough that I can ignore them. Needed more cheese, though.

I made a big batch of veggie soup last weekend have been subsisting on it since Friday.
