Sometimes more if my brother and his wife are over or if my sister comes because they're vegan (and sis is pescetarian) so I'll make a vegan gravy for their tofurkey.

Is your mom Asian and my dad? Cuz my dad is an American demichink and his idea of Thanksgiving gravy when I was growing up was stir frying some mushrooms and onion then adding water, chicken stock/cube and a cornstarch slurry.
And we had our turkey with rice instead of mash.

It's decent. I do a giblet gravy that I fortify with instant beef gravy mix that generally gets pretty good reviews. You have to eat it while it's hot because once it cools down it acquires the consistency of Fancy Feast.

It's a little more than slight. I've had similar issues for a long time and it can get pretty bad if your diet is that severely restricted.

Usually not bad. I make a turkey stock using the giblets and some veggies, then make a roux and stir that in. I don't add any of the drippings because the turkey is usually marinated and would throw the flavor off.
