Chorizo & eggs is quick and easy but IDK if you can get Mexican style chorizo over there. I guess bacon & eggs would work but that's usually a flour tortilla affair. You could just do ground beef & taco seasoning, or see whatever the Swedes are doing on Taco Friday.

You don't have to use tortillas to make an established dish or recipe. The best way to use them is as a utensil. Scoop up a plate or bowl of eggs, beans, and veges with your tortillas. Many construction workers who stay over at job sites do this, on both sides of the california/baja border. Usually eggs and beans for the protein, sometimes chorizo and some potatoes. Keep it cheap and keep it simple.

Unless you can import dried chiles. You will never taste the same flavor. Its all just a combination of them.
Buy a pack of arbol, guajillo, pasilla, and ancho chiles.
Use Arbol, garlic, onion and tomato for salsa.

The best thing you can do with corn tortillas that weren't made minutes before your tacos they went with is slice them and fry them into chips, or make some tacquitos (wrap your ingredients in, put a couple of toothpicks in and fry). Corn tortillas are only good hot off the press and the only valid method of reheating is to fry them.
