I don't get it. Why aren't more people rendering tallow at home? I see jars of it for $18 at my local store but I can just buy beef fat from an asian market and make it at home.

Depends. There's many types of saturated fats.Diary fat is generally bad if you're senstivie for cholesterol. Tallow from grass fed cows is about the healthiest you'll find for cooking. For low temp/cold EVOO is king.
