Because Alfred is ultimately a superfluous character, specially at this point in Batman's history.
He already has a ton of family to keep him company, already has Babs to be mission control, can go to Jim for old man wisdom, and can just hang around anyone for exposition.
Sure, we all love Alfred, it's nice having him around, but he's also not really necessary to Batman stories, at most we miss out on some dry humor, but it's been 7 years and Batman is still Batman, he doesn't need Alfred.

Like you said, Alfred died and came back way back in Pre-Crisis, now they have the chance to do that again for a brand new era, because once he comes back, they won't be able to just kill him again with the same gravitas, at least unless they reboot again.

Nah, the whole point of the Absolute Universe is that is its own thing separate from the main one, that's how DC gets to have their cake and eat it too, having the classic main timeline with how the heroes usually are, and the Absolutes where everything is different.
Alfred will come back as his usual self, it'd make no sense to turn him into Absolute Alf when people can just read Absolute Batman for that.
They could maybe kill Absolute Alfred tho, that's another version of the story they could tell.

What particularly bothers me is I get why they don't want him to be an even more OP Superman but they could take the chance to make an interesting Superman copy instead of adding another standard Kryptonian to the roster, someone who can still function while the others are crippled by Kryptonite or Magic but vice versa introduce unknown vulnerabilities that make him have to rely on others he's postured over when he gets cocky.

Silver age Superman had vulnerability to Q-Energy, an interdimensional radiation, which could be stretched to claim parallel reality portals, people and objects emit enough initially to cause power loss, and residual amounts after a few day let SBP keep his powers but cause his durability to be bypassed to harm like Superman with magic.

It could then be used in an impersonator mystery where once someone human manages to draw blood from striking him, he realizes the person isn't from the Earth he's in and has adapted to, wondering how they got there, what they know about him, if they're from prime Earth, if he can get back and the risk of trying to use their means even if it doesn't work or goes to the wrong place and leaves him vulnerable.
