Alright, I'll bite. What are they useful for? How is what they're being used for not achievable by redirecting the resources that made them possible (man-hours, energy, materials, etc.) elsewhere? Lighting paintings on fire in a pit can also be incredibly useful at keeping people warm up until you figure out a stove can do the same thing but more effectively.

The issue isn't that llms are inherently bad, but people started calling them "artificial intelligence" and claiming they could do shit that they cannot do. They're a tool, and a useful one, but they can't create and they aren't a replacement for actual skilled human workers. They can augment human intelligence but not replace it.

Not really, Claire is tasked with creating and managing a department, database, and archival system designed to be used by multiple other departments (and apparently having HR thrown in her lap too). As pointed out, properly implemented analytical LLMs are a tool to improve performance but a poor substitute for actual human workers. You're a basically making the same argument the AIbros make about how vibe coding can replace actual coders.
