Yes, they do it for a reason. A few actually.
They don't know where, when or under what circumstances they would have to eject. This could be in the middle of nowhere, so a gun of some sort is nice to have just for foraging or defense against dangerous animals. For instance the Soviets designed a 3 barrel survival gun that mates with a machete (which acts as a stock when sheathed) after a wayward group of cosmonauts ended up stranded in Siberia for a few days throwing empty cans at a pack of aggressive wolves.
They could also eat shit over contested territory with pissed off combatants on the ground. Odds are the pilot would be captured, sure, but they aren't always in the mood to take prisoners after being bombed relentlessly. A lone pilot with an M4 or AKS-74U isn't going to take on an army by themselves, but it could be just enough to get out of a tight spot or hold them back long enough to be extracted.

Compared to everything else you have to carry the addition of a side arm or light carbine is nothing. There's like 30+ items that go into that. If I went down somewhere remotely possible, hell even somewhere friendly I would feel much better with a sidearm or carbine. If I run into hostile wildlife or some isis tier group that will set me ablaze, what am I supposed to do? Shout at them? You cite helos as having more space but at least they usually have crew serves and are never manned by a single person, you eject with a jet its you on your own or maybe with your WSO.

I am assuming Helicopter crew should have carbines or smgs for the same reason other vehicle crews have weapons. While Jet pilots are usually deep within enemy lines, or fighting over their own territory using either standoff weapons or acting as an interceptor. Other reason is helicopters get downed by squad based weapons while Jets get downed by shit that is literally minimum at the brigade level, and so even the fucking brigadier general himself probably knows where the pilot got downed.
