I've thought about writing every now and then for a long time now but never managed to really get myself to start. Outside of academic stuff I've only written one or two very short stories maybe ten years ago. How would you guys recommend should I start if I wanted to get into writing? Any good videos or guides on that topic?

What kind of theme that you want to explore in there? what kind of philosophy that you want to cover in there? A book writing process should benefit both author and reader in that particular aspect.
For example, you dont just go ahead and write a story about a guy who wants to get a girlfriend and he succeed and they fuck. No, its only beneficial to your fictional character which are basically nothing, because they're fictional character. Instead, you have to write a story about a guy who got himself a girlfriend after finding unsatisfying truth about life, work, and unrewarding passion; he found a girlfriend where in the process of dating the girl, he found some inner peace in there, a form of escapism of this endless routine of life.
If you dumb the moral message, of course it will sound as corny as "love is the essence of everything". But people will find your actual writing quality that are lies between the plot and submerged with the prose and intertwined with each other within a good flow. That's where your story turned from a simple paperback novel to quality literatur.

I've written and self-published 4 novels, a short, and a novelette. The few people who rate/review them seem to enjoy them. I do it mostly for my own gratification.
But I can give you my process.
Worth mentioning I write general fantasy.
I start with some characters and a concept. I generally use 3.5e D&D race and class combinations to figure out what my characters are and what their abilities and powers are etc. One guy might be a rogue, another might be an NPC adept etc. I'm not writing D&D fiction, but it gives me a good starting point and some soft limits.
So I'll normally come up with a few race class combos. Something interesting. Like an oozemaster. Maybe someone else is a wizard/druid specialising in poisons.
Using these, I'll come up with a concept. Sometimes the concept comes first. This is the "what would happen if", it's basically the question you're exploring in the book, which acts as an anchor so that the book is about something.
It doesn't need to be serious. One of my "ifs" was "what if prophecies always come true but people can manipulate and reinterpret the prophecies to mean something different?". That book was a humourous fantasy.
I used to not outline, but have found outlining is better. I used the Save the Cat beat sheet. Basically, figure out how far in the story (by word count and scene count) a certain plot and story beat should happen. I found my writing was generally doing that, but planning out each scene ahead of time let's me get a first draft faster, with less subsequent rewrites.
Then... You just write. Finish a draft. Then start editing. Fix plot shit. Fix boring bits. After you've done a few stories, you get it and can do it easily. Like most things, takes practice.

If you've never written anything I strongly suggest writing some short stories first to get a feeling for how to create compelling narratives. A musician doesn't start out writing a symphony, and neither should a writer.

I don't agree with you. This is like telling a musician to start with advertising jingles. If they do that, they'll never write a symphony. Different writing formats are very different. Better to stick with one, imo.
Start with a novel OP. It might not be the best novel you ever write, but you'll learn more for the next one.
