What is the easiest instrument to learn as an adult?

All instruments are easy or hard depending on what you play and how you play it. If you are actually serious about being a musician, you should seek harder challenges.

Cymbal

It depends on how good you want to get at the instrument. For example learning the basics of piano is easier than learning the basics of guitar, however learning the piano at an advanced level is more difficult than learning the guitar at an advanced level

Bass. By far. You can play bass in a band pretty easily. You won't be good, but you can be perfectly mediocre/adequate. You just pluck root notes one at a time. Easy as shit. Much harder to get very good at of course. But the answer is bass.

I could teach you to play the skin flute in 6.5 minutes
