South Korea is booming right now and is filled with tourists, but from a very different demographic than this board. Even if you don't think that Korea is best at any of those things, it does all of them quite well.
Korean temples are underrated and there are many cool historical buildings to see, quite different from Chinese/Japanese architecture.
The food is fantastic and quite underrated. Korean bbq is becoming a meme worldwide now but there are hundreds of other things to try that many people are sleeping on.
The people are friendly and fun. It's easy to get friendly with randoms and end up drinking all night together. Nightlife is really fun and Seoul stays up pretty much 24/7. Girls are also very cute and fashionable.

It's just a cool destination, that's all.

Not a 'dish' but the Koreans make a rice wine called Makgeolli that's similar to Nigori sake. I liked it so much I got a recipe and am planning on making my own. Food-wise I'd try a little of everything. There are a lot of traditional, hole in the wall kind of restaurants that specialize in a particular dish. e.g. they only make ox tail soup, they only make dumpling soup, etc. and strive to be the best at whatever they make. These were the most outstanding in my experience. Of course, the BBQ is a must.

Hotel receptionists recommended me to go to Gangnam or Itaewon. I went to Gangnam because it's the nearest. I was like "Alright, i'm here. Most people going to Seoul/Korea expect Japan 2.0, it's not really Tokyo or Osaka/Kyoto. It's way more like Nagoya or Sendai in terms of Asian city. I live in Busan. I like Korea enough to live here for the next couple years happily. Has its quirks and isn't perfect but I've been here a few months and generally had a good time.
Koreans are definitely very superficial, but they're not all bad. Sharing a drink with a group of dudes can be fun. Girls tend to be very reserved in person but if you match with them on an app and take them on one date they will immediately fuck you on the second, like some weird unofficial rule. You don't have to speak any korean and many of the horniest hookup apps are thinly disguised for "language exchange."

Kimchi jjigae is one of the absolute best. It's a kimchi stew with pork and tofu in it.
A lot of people love gimbap, which are their rolls that look like sushi, but instead of fish it's almost all steamed veggies with steamed egg and maybe a tiny bit of boiled meat if you're lucky. I'm not a fan.
Barbecue is also incredibly varied. My favorite place I've found only does pork, but they circle it around the upper rim of a giant wok, then fry kimchi in the fat that runs down into the center. It's unbelievable.
They eat a shitload of fish in every form possible, especially in Busan. Their raw fish is called hoe (pronounced like "hway") and in many of the markets you can literally pick a live fish, watch an old lady chop its head off, then take it upstairs and have them turn it into hoe immediately. I've also tried live octopus (not really alive, just moving) and live fucking shrimp (REALLY alive, even my local friend had never seen it before - they stripped the shell off the middle and we just bit right into it, it flailed around and made eye contact with me as it died).
If you can find a regional dish call nakgopsae, it's probably my favorite thing I've tried. A spicy stew made of octopus, beef intestine, and shrimp. Anything with octopus in it is delicious here - stew, ramen, stir-fried.

I've met some expats who've been here much longer (ten plus years) and they all have oddball stories. Most started with college, learned the language, then fell into strange jobs like hosting foreigner radio shows or doing translation work. Thing is that salaries here are so low you can get by without making much money, but if you stay here too long, moving back to the west would leave you broke - expats in their 30s sometimes can't go back, they'd be nearing middle age with no savings and no applicable experience. I've met like three American girls who are almost 40 and act like they love their shitty middling jobs here but you can tell they're stuck and don't really know how to dig themselves out.
If you want the best option, be a burger and find a way to work for the US government here. You can live like a king on an American salary and you'll never have to worry about visas or anything. USAJobs probably has some positions. I am unironically here as a glownigger.

This is very accurate to my take as well, sure it's fun but after you've hit all the spots you realize how everything is the exact same shit. I don't know how to describe it as other countries seemingly don't have this issue.

I can revisit Finland, Taiwan, Japan, Germany, etc. Often find something new or an event that popped up; Korea just doesn't have that. It's like OOO let's go to the mall again... for ... walking around...

1) Physically being in Korea to book something due to their shit firewall stuff so some sites will just constantly error

3) Need an ARC(alien registration card) to do some event, concert, festival ticket purchases or gamble the fuck out of it guessing if you can get it there with a CC, but not VISA! has to be some stupid Korean bank shit sometimes
4) Some events basically have 0, and I mean 0 promotions outside of Line App or some other useless social media only available to Koreans and known about it.

That said, I got some time booked there coming up very soon but only because I made friends who pointed out a bunch of events and things to do, while getting an airbnb for ~200/mo full apartment.

Food: the neighbourhood markets are where it is at. Mountains and mountains of things to try or buy. Busan had some good ones including Gupo and Bujeon.

Fashion is Seoul. The vintage clothes markets are well known and well posted about.

Cities: Busan is great, but I also rate Yeosu and Jeonju. Yeosu was site of Expo a few years ago and has a good harbour area packed with restaurants. There are some nice temples shortly outside of town.

History: head to Gyeongju. Huge burial mounds from the Shilla Period. Its Unesco heritage.

Gambling: Any Lotte hotel has a casino that only accepts foreigners. In Busan I used to go to Seomyeon one a lot. Bring your passport to get in. Drinks were free while you are at the table. It was fun watching the Japanese businessmen blow fortunes at roulette while chatting up dealers.

Hanging with locals: post up at some of the cafes. There are loads in a lot of cities. The beach side ones in Pohang are pretty cool as well as in Busan. Look up language exchanges to meet up with local people. I ended up with some really good dates out of this. Some didn't lead to the romance explosion but it was hard to say no to getting shown out by a girl and her friends.

A fun experience are the pool halls. A pocketless form of billiards is fun with either three or four balls depending on the style. You get points for doing combo hits. It is a popular guys night out activity.

Holdem Bars are a thing. You pay for drinks which gives you chips. You can exchange the tips for more drinks or buy more drinks to get more chips.

If you are into consooming things, taking pictures while consooming things and partying, south korea is good. If not, it's the most boring place on earth.
