Okay, so in the interest of science and gameplay efficiency in this casual party game, I have done some testing to try to determine the optimal thing to do with your stick during glide challenges.
I tested four different machines with baseline stats, and used meta knight for all of them. I tested no input at all, straight up until the peak of the flight, and then no input; a slightly tilt back until the peak of the flight, and then no input; a medium tilt etc; and a heavy tilt etc. Here are my results:

Warp Star:
No Input: 520.90
Straight up: 603.95
Slight Tilt: 657.08
Medium Tilt: 695.56
Heavy Tilt: 703.82

Wing Star:
No Input: 773.40
Straight up: 1013.02
Slight Tilt: 780.63
Medium Tilt: 946.55
Heavy Tilt: 992.53

Paper Star:
No Input: 535.65
Straight up: 1089.05
Slight Tilt: 788.93
Medium Tilt: 1054.20
Heavy Tilt: 1049.07

Shadow Star:
No Input: 455.06
Straight up: 562.16
Slight Tilt: 448.98
Medium Tilt: 496.44
Heavy Tilt: 554.92

Conclusions: Save for the warp star, holding straight up seems to be consistently better than tilting in general, though tilting obviously gives you better results than no input.
The warp star is the weird anomaly in the results, with even a slight tilt up being better than holding straight up, both otherwise, it is fairly consistent than a steeper initial angler will get you better overall results. There was a slight inconsistency with the paper star, with the heavy tilt being slightly worse than the medium tilt, but I am leaving that up to user error.
Because of the warp star being inconsistent with the rest of the data, I assume there are certain stat differentials that can cause a tilt to be better than holding straight up, and for this reason I can't say for certain that holding up is always the best answer, but a heavy tilt is fairly consistently good, only slightly worse than holding straight up when doing so is optimal, so it is a safe bet, even if it isn't always optimal.

That might be because of its flight speed. Flight speed and lift are listed as separate stats, and the Warp Star has the lowest flight speed among the stars you tested. Perhaps the lower a machine's flight speed, the less it benefits from the additional altitude granted by holding straight-up?

I also just noticed the Warp Star has the highest weight of the four you tested. Flight paths in air ride, and air riders too I assume, flatten out with increasing weight.

Air Riders is as great as the original. it's not meant to be gargantuan, it's a fun short-burst game as it always was. comparing this to mayo kart is folly, considering how lackluster THAT game is.

Honestly Return to Dreamland is such a sterile entry in the series that it felt like it was done out of obligation to have a console Kirby and the remake doesn't really fix that. I enjoyed Triple Deluxe much more and will be starting Planet Robobot next year because even though they have the same engine and share gameplay, these 3DS entries felt much more deliberate.
With that being said, Forgotten Land and I say that for the same reason as the 3DS games, it has concepts that feel deliberate.

It's good, it's a bit slippery in the early stages of city trial but it can be very fast and succeed in a variety of events. even battling stuff.
In Air Ride, my friend uses it all the time and his win rate is 72% last we checked. It's good.

It was a little different that Canvas Curse from what I recall, I dropped it but there's been so many Kirby games that I pick up, get through the first world, and then drop that I think that there's more I've done by doing that than ones I've completed. This is all to say I eventually go back and finish them years later, but Rainbow Curse is something I haven't done that to by virtue of being on the WiiU which takes up a lot of real estate in my living space compared to how much I use it. It was good but it had some weird comboing mechanic to build a special from what I recall that I didn't like because it felt like a way to streamline the levels to play them in only one way.

I feel like Triple Deluxe is good but it's letdown by the gimmick. Hypernova is even more of a pace breaker than the Super Copy Abilties and it makes running through every other stage annoying for me. Robobot perfected the RTDL style because the robot is the least intrusive while also having the most variety

I liked what they did with the 3D effect in that game, even if Mutant Mudds did it before HAL did. It made the puzzles a bit more satisfying, even if many of the solutions were easy and some restarts made you effectively kill yourself to try again. Also I thought the gyro controls for some of the puzzles and light platforming sections were nice additions, too.
My understanding is that Robobot does all of this but just has more, so I understand that Triple Deluxe is in some areas completely outclassed, but on its own I liked it a lot.

It's a slidey halfway point between the Warp Star and the Slick Star/tanks. You use the long slide times and high slide speeds to prep a direction over tight corners. It also charges faster on harder turns. It's not for me but I see the appeal.

The machine market is unironically probably the least thought out part of the game. You can only view a single page of results, there's no tags or keyword searching, people can only have 3 vehicles uploaded at a time, etc

It seems almost intentionally designed to make it difficult to find specific custom vehicles or to access older made ones.
