Not at all.
They have mechanics mostly unique to these entries only and do not play like traditional Castlevanias.
These are post-SotN (Symphony of the Night) so are metroidvanias.
The first 12 castlevanias were not metroidvanias and are infinitely better entry points before you get to these more "advanced" games.

Start by emulating 1 (any version) and 3 (Japanese version), as they present the series' mission statement. I would recommend this even if you get filtered by them at first, you should still start with these two games. And before you ask "do they still hold up?", yes they still hold up. 3 is especially suitable for modern sensibilities since it's a very ambitious game with a much larger scope.

OoE specifically should be among the last Castlevania games you play, as it's last sendoff for the series. It's full of fanservice and it mashes up a bunch of ideas spanning across the entire series, while also kind of doing its own thing. I think you should know that before getting into it, even though it's ultimately a low-tier Castlevania game in my opinion.

I mean, you're the one asking for a "starting point", these are great castlemanias and you'd enjoy them, they just don't represent the core vibe, they are kinda sidegrades.
If you just want fun games, get it. If you want the feel of the whole series, play chronologically. Start with Symphony of the Night or Aria of Sorrow, then these.
