If it's backwards compatible, and you have an internet connection, you can put your disc in and play it, and if your console is set as your home console than all digitally installed games and backwards compatible games will be playable without an internet connection. You just have to be sure your games are marked as backwards compatible. There are some games which are delisted, like Mortal Kombat 2011. That can still be played despite this. Just verify your games are marked as back compat and you're good.

Once it's been played though with internet, you can play without internet for good, as long as you're console is set as the home console. I'm not really sure why they do that, but it's a simple matter of flicking a switch. Most 360 games I cared about eventually were made backwards commpatible.
