I'd put dogs above horses, actually. The amount of work they put in for humans in history far outdoes horses, and they are only slept on because they're reduced to being pets.

Is there? I feel like most people get their fill from things like Red Dead or Zelda. A dedicated racing game seems pretty niche to me. Most people that want to play a racing game are either in it for absurd item abuse and wacky tracks, tight lines and slipstream-focused navigation, or a realistic representation of their favorite models and makes. Sure you could add a horse to Daytona USA or whatever as a silly gag character, but an entire dedicated horse racing game really only seems to have the market of "57 year old Japanese salaryman" and I think they get their fix from the gambling aspect more than anything else.
That all said I actually really liked Pocket Card Jockey on the 3DS, I think it eventually got a Switch port. It's a hybrid horse racing/solitaire game which... actually now that I think about it, is not beating the "57 year old salaryman" allegations I made earlier.
Of course I say all this but I have a gut feeling this is a thinly veiled umamusume thread, and honestly if you want horse racing game focused on a more raising sim approach, and can stomach the fact that your "horses" are really anime girls, that really is the best you're gonna get in this kinda market.

No donkeys, cows and dogs have done way more for people. Horses were also going extinct before people domesticated them. Donkeys work harder and are more subservient. Cows provide milk which has 10001 uses, meat, leather and can pull carts or carry items. Dogs hunt, guard, protect, have an amazing sense of smell which also goes a long way.
