My favorites are Medievil 1-2, Rayman 2, Armored Core, Future Cop LAPD, Siphon Filter, MGS, CTR, Soul Reaver, Wipeout 2097, Ace Combat 3, Rollcage Stage 2, Hogs of War, Spyro...I'm missing a lot of shit, I didn't play everything I wanted, but the PS1 was a fucking great console, I spent hours on demos and it felt like you could pick a completely random game and have a good time. Felt like 90% of the games were at the very least 6/10. Endless fun

There are many good games, but Silent Hill is probably the only one I've specifically gone back, emulated and enjoyed from start to finish. Getting to the next sparse CG sequence is a real reward.
If you've got no idea where to start then play the winter releases 98 demo discnearly every game on it is amazing
