I actually used Vincent for both fights with the same basic strategy, but using his low HP weapon against Jenova and earth weapon against Baloir, but honestly I would guess you're more likely to have Bahamut Greatsword than a juiced up Quickdraw. Don't bring a healer or anything, just full DPS and end the fight in record time. Be aware that for Jenova you do need to kill the soldiers, but for Baloir you can ignore adds

In this case it will let you dedicate more slots to HP/MDEF, but if you have those at a good level anyway you will get easily triple the damage out of an elemental set-up. The AoE is kinda nice though.
