The first you can get at any of the many plains, and the second at Mt. Koltz. Water Rondo is admittedly time-consuming to get, as you gotta go through the Serpent Trench again, which means leaving the airship on the Veldt and getting back there by taking the boat to South Figaro from Nikeah, then going through Mt. Koltz, and making your way from there back to Barren Falls and into the Veldt. It's worth it, though, as Mog destroys pretty much every enemy in the next sections you can use him in with those dances.
