Accidentally dry aged salmon?I defrosted some salmon filets to cook on Mother's day, but they were still a little frosty that day so I decided to cook some tri-tip I had instead. Monday morning I salted them, and put them back in the fridge for later that day, but through a series of unforseen events I kept forgetting, or things kept getting in the way so that they sat in the fridge drying for roughly 96 hours.They didn't smell off at all, just a normal salmon scent. I was mainly concerned about the texture. They definitely turned out a little dry. They also cooked really fast. I actually don't mind the sort of crust on them. I also like how it retained that deep red color instead of turning pink. The skin never got crispy though, it just stayed rubbery.

I live in San Diego. Just had a little puesto open up next to my house in front of a liquor store. The cook "Linda" shows up three nights a week and griddles all kinds of carne. She makes Tijuana danger dogs which are insane. About to head there now to get some street tacos.

Low tier ones were a challenge, the stuff would be dry and meh quality, so you had to be picky about what was safe to eat. The mid tier ones all had good sweet and sour chicken, ice cream was always nice. The nice ones were a real treat - you could get some good shit like sushi (low tier sushi) and neat little cake desserts. Don't care which one, they ALL used shitty iceberg lettuce on the buffet for "salad".
