The single most defining thing about an isekai is the transportation to another world; everything else doesn't make an isekai - only this does. Trying to define the genre by its (current) tropes instead of that is completely asanine.

Light Novels pre-2000s were for novelizations of TTRPG sessions, also known as "replays".
Stuff like Slayers and Lodoss Senki.

Then in the 2000s they became a medium for cheap knock-offs of popular rom-com, battle-harem and ecchi manga from that time.
You always got the typical package of high school, urban fantasy, fake-harem where CF loses and first non-CF girl wins, shitty "kyaa hentai" slapstick comedy that no one but editors/producers cared about, the obligatory onsen episode, the obligatory beach episode, sometimes included ecchi as well, but there was almost never any sex because the ultra-purist otakus which the editors were convinced were the core audience of these kinds of packages would be deeply offended by it as they view the MC as a "rival" in their affections for their waifus. This concept warped over time with the final form being the "magical high school" setting in the early 2010s.
Stuff like Highschool DxD and ZnT. There were also outliers like SAO and CotE.

Finally in the 2010s isekai came to the spotlight and Kadokawa poured a lot of money into it which triggered a chain reaction where other publishers also took part in the "primordial chaos" that is Narou and Kakuyomu. The quality vastly differs between different isekai but the fact that editors get no say until after the story and characters have already established their identity and popularity make them far more authentic compared to what came before.
Stuff like Tensura, MT and Re:Zero. The Banished from the Party concept branched out from isekai, e.g. Shadow Healer and A-Rank Party.

When people make fun of Light Novels they either use particular bad examples as strawmen (e.g. "MUH dual-wielding skill? WOW!") or just outright cite flaws of the 2000s LNs as if they were still present in the 2010s+ LNs (they aren't) because they are either being disingenuous or because they or whoever they quote actually only read 2000s LNs and never anything newer.

The reality is no one uses or needs this term. Sometimes someone will call a shoelacer story isekai. They might get corrected or not and the response is "oh ok". That's what happens organically. This also means you don't need an elaborate term. Who the fuck is going to insist that actually the story needs to be called "double isekai"? That's stupid. It's the reason why "Alice in Wonderland is isekai" while semantically correct, is wrong usage, and "I, The Cheat Skill Dildo-Maker, Got Kicked Out Of My SSS-rank Party So I'm Going To Build a Dungeon With My Slave Harem is isekai" seems like a natural use of the term even it features no dimensional travel or even reincarnation.
