I cook every single meal we eat. I don't think I've eaten out in 2 years. It's how I can get away with having a 700 dollar blender (Vitamix Ascent with food processor attachment). I also have a KitchenAid Professional stand mixer, pasta extruder, and cutter attachments and all my pots and pans are a mix of All Clad D3/D5/Copper Core with some 40+ year old Faberware. I'll eventually get a couple Le Creuset or Staun dutch ovens to round it out, but the Cuisinart/Lodge ones I have now work just fine.

The lockdowns and massive currency debasement was a major wake up call. If my house is too cold, the trick I use to wake the starter up/get the dough to rise properly, is to shove it in the back of the oven with the oven light on, not in the direct light, with the oven door slightly propped open as to not over heat the dough/starter. So you can set it to whatever temperature you want to proof your bread and actually measure your rise by dough temperature and time instead of fussing with oven lights and cracking doors and still having inconsistent results. Well that’s not the point. The point is that if you use the same recipe, hydration, and starting dough temperature every time then you can use a chart to cut your bulk fermentation and start shaping exactly when your dough is at optimal rise, that way you’re not relying on visual cues or ambient temperature. I always cold ferment at least 16 hours. All my loaves have excellent ears and are deeper golden color than that anons. I get perfect blistering. But it’s really a science and if you’re not doing it exactly the same every time you will have inconsistent results.

I forgot to mention I also use a challenger bread pan which I’m sure most of you haven’t invested in, and I spray my sourdough with water before putting it in the oven to help with color and blistering. And I run oven thermometers in the oven. Always preheat 45 minutes before adding the bread to make sure everything is exactly at the temp I want before I put it in the oven. I get your point, I am just not running a bakery. If I was making bulk batches and wanted perfect consistency, then I would be doing exactly what you have described. I have enough personal experience with the recipe I use and modified, that I can get it to where/how I want pretty consistently. I have fucked up enough to know that there is quite a big range of tolerance according to my personal taste in texture and flavor. If I was selling my loafs, then my way of doing things would not fly as consistency would be very important to me. You obviously care much more about the art of the bread than I do, I love all my loafs regardless of how they look.
