its a pretty traditional thing to add. I think most americans skip it or use breadcrumbs but to make the softest juiciest meatballs u should use stale bread soaked in milk ;)
my recipie is:
500g beef or 50/50 beef/pork (mix is more traditional. any ground meat that's not totally lean works)
1 egg
2 slices of stale bread (fresh works also)
milk
garlic
parmesan/grana padano
herbs of ur choice.
s&p
[method]
put the bread on a plate or shallow bowl and pour milk on it, let it soak a bit then pour off and squeeze out excess milk. mash bread up finely by squeezing (u can use a food processor if u want I guess)
put in a large bowl with meat, finely chopped garlic, herbs (finely chopped or dried) egg and a handful of cheese.
season generously.
mash and kneak about with hands untill homogenous.
roll into balls and place on wire rack and bake at around 200°C with a tray underneath to catch the fat/juices that leak out.
should take roughly 15 mins but keep an eye on them.
alternatively you can fry them in an inch or 2 of olive oil (more traditional but expensive)
