Because like 90% of the "taste" of cheese is actually aroma, and slicing it super thin helps to release that aroma when you put it in yo mouf.

Not that poster but it might have to do with temperature. Food that's around the same temperature as your body seems to have the most flavor and aroma. Thinner slices will reach the same temperature as your mouth faster.

FTGE :-( At least in my area we can now buy raw milk cheese from local farmers without having to act like we're doing a drug deal, though the selection is quite limited.

Trader Joe’s 1000 day aged gouda is so good. Perfect savory and nutty flavor with those little calcium crystals… heavenly.
Otherwise there’s a local farm that makes goat and sheep cheese. The cheese is fantastic but between $30-$60/lb depending on style so it’s a more rare treat.
