something I've noticed recently is that my boiled eggs are getting harder to peel. I vividly remember as a kid cracking an egg on the counter a few times, one or two rolls, and the shell would peel off in a couple of pieces. nowadays I'll crack the egg and it'll split in half in the shell, or it'll take five minutes to peel and involve having to pick off hundreds of pieces of shell and dry membrane. anyone else noticed this?

me too, actually. When i was a kid i could peel eggs no problem but now i feel retarded when i do it. but yeah apparently the old thing matters? my dad made some boiled eggs, and i thought they were hard, but no, they were soft boiled. I tried shaking them around in a plastic container with a little bit of water. Only one survived

How are you making them? It seems like more recently the advice is to start the eggs in cold water and bring it to a boil, but in my experience that makes them harder to peel. No issues when boiling the water first.

I find high heat boiling my eggs for 6mins turning off the heat for 1-2 mins and shocking them in cold water after produces the best results
Keep I mind my egg to water ratio is pretty solid aka I don’t give them much room
If you put to much water to egg the water won’t cool down from all the eggs and you’ll have to adjust your time accordingly

There used to be a website that tried every possible different factor in making easy-to-peel hard-boiled eggs, they literally cooked a million eggs throughout the project
there are only two things that make eggs more likely to peel easily
Bring them to temp as quickly as possible
Shock them in ice water
That's it and it's still no guarantee

I bring my eggs to room temp.
boil water
add eggs
boil 6 minutes
let sit covered 6 minutes
rinse in cold water until totally cool.
95% of eggs should peel perfectly.

Your eggs are too fresh. I'm not trolling. Older eggs are easier to peel.
If you ever had hens you'd know that. Eggs that were pooped out the same day are impossible to peel, you'll just destroy them trying to peel them
