I am giving up meat for lent.
Please recommend me your favorite vegetarian/pescatarian recipes - especially stuff for meal prep.

When I remember to eat fish on Friday during lent I just get frozen ahi, do the quick thaw method with a bowl and running water and eat it raw as sashimi slices or as poke.

Add lemon juice as a finishing touch

If you want white fish go for cod

Super veggie is a great meal prep lunch.
Picrel is my modified version, but you can remove the chicken (2 breasts / 700g for 5 serves) to make it vegan like the original.

Some other small mods to make it cheaper and easier:

Also, wine and olive oil are considered "fringe", because they were traditionally sold from oxhide containers (very handy for merchants, since they could be folded and stowed when empty, unlike barrels), thus becoming spiritually "tainted" (by their closeness to animal tissue). As such, they were only permitted on specific days during the fasting periods (prior to Easter, and prior to Christmas).

When I'm trying to meat detox. I'll make a big batch of bean soup with tomato paste, carrots, celery, onion, and a can of navy beans, great northern beans, kidney beans, and cannellini beans.
Usually add pepper flakes, just enough to give it a little zing, and the basic Italian herbs like basil, thyme, and rosemary.
It's an easy recipe. Sweat the onions, then fry the tomato paste in butter until it's just starting to darken. Then just simmer everything in the pot until the vegetables are tender.
