Realistically from what we know in the show, and not what was added on post hoc 10+ years after the series ended, what would a young Iroh be like? Personally, I think he would’ve seen himself as something of a Messianic figure not too unlike Rhaegar from ASOIAF. >He’s in Communion with Spirits>Sees visions of himself conquering Ba Sing Se>A leading, if not, a high ranking member of the White Lotus Society >Dedicated to, at least a version, of Sozin’s ideal world
ATLA Iroh is a broken man who rebuilt himself after tragedy struck and came out the other side wiser.Pre and post luten Iroh should be significantly different characters. Losing his son should be the catalyst for him to reexamine his life, comune with the spirits and join the white lotus.

Begs the question though why would the Earth Kingdom captain come to be driven to break this rule of war? Propaganda can play a role, sure, but I suppose a simple explanation is that a young Iroh was onboard with the policy of sending Earth Benders to work on oil rigs and metal prisons in order to justify the Captain, whose children may be Earth Benders, to take such drastic measures.

Granted, we don’t have a lot to go off of, but all things considered he didn’t seem to relish in the idea that Ozai should learn humility through the death of his first born. Iroh and Zuko included. Iroh was just nicer to his own people and recognized the strength and talent of the other nations but he wouldn't hesitate to crush them.Still he wasn't a megalomaniac like Ozai so he probably would have suspended the fire nation war campaign to hear out Aang when he showed up. Maybe even try to turn him or get on his good side. Iroh wouldn't as strong as Ozain as an individual, he was already getting fat in that flashback, but his army would been a lot more efficient and he wouldn't let someone as unhinged and incompetent as Zhoa run around with an entire armada. Aang wouldn't have to worry about taking down any individual as strong as Ozai but he'd have an entire army with capable leaders to contend with and they probably would have had an easier capturing Aang.
