How would this fare as an induction cooker? commercial gas ranges are like 160,000 BTUs while induction cookers are 3 kw max which is a measly 12,000 btu.

I don't think you understand what that tool is for
It heats up whatever is in the center of that white coil.
It's also water cooled.
Induction stovetop usually have dedicated, fat wires.
They don't need as much power because they're heating the metal directly, whereas gas sends a ton of that heat up and around the pan.
That said induction is gay and useless for stir fry
