It's been a long time since I've touched Ubiquiti stuff, but I'm pretty sure they still have the software controller that can run on pretty much any server.

I have a pfsense router for 10 years. I caved in last year to setup unifi APs with my own unifi controller vm. Sole reason was for vlan ssid's. I don't trust the amount of constant telemetry from the unifi system even without an account. They are all blocked from the internet. I only open access when I want to upgrade firmware once a year. And from what I read the firmware upgrades are getting worse. I would never let unifi take control of routing.
