It was basically their full time job to garden and make the best use of the land to feed themselves and their family. If the earth broke away revealing a gulley they might plant a single peach tree, for example, to drink up the water and stabilize the surrounding soil. Whereas a modern farmer might dig a channel to drain the field so nothing interrupts his field of sugar beet.Of course a faggot like you might imagine modern farmers are le bad and ignorant, they are actually aware that hedgerows and the like are important to prevent erosion, they may even enjoy gardening, they just have different priorities with their time and labor.
