An artist I follow posted pic related a few days ago, and it did surprisingly good among his followers. Doing this seems very easy so I was wondering if there was still a market for such things?

If you meant "people who would interact with it" then absolutely. People love that kind of stuff.
To monetize these, your best bet would be to make a website and earn money from the ads, or better yet make a mobile app.

I see the coloring books everywhere, so I expect someone is buying.

Adult coloring books have a growing niche.
Coloring is now being marketed as a new therapeutic treatment for anxiety and restlessness.

I am not sure about connecting the dot books but that is not impossible
Still pretty small market but I can see it growing the same way

Additionally, I found plenty of "Trace over" books where they have those opaque manga drawings and the goal is to teach drawing by tracing over it
So, yeah. There's definitely a market.
