something i don't see emphasised enough is copying other artists in order to learn and see where you're going wrong in your own work / studies. I see a lot of emphasis on master painting studies, but barely ever in regards to line drawing, character design, stylisation etc.

my personal observation of an extremely fast way to improve is:

1- copy art that you like
2- attempt to create drawings of similar qualities to what you were copying
3- look at the difference between the 2 sessions, as well as the reference, and analyse what gaps in your knowledge keep you from matching the quality of the reference
4- study to bridge those gaps
5-repeat until got gud

why is this method not thrown around more?

We haven't been looking in the same places then, I see it emphasized more for line drawing than painting

It's not thrown around more because it's only really effective for line drawing and particularly stylization at that.

Effective improvement comes with doing blind contours, gesture studies, the Shrimp Method, and the Cognitive Method in that order. You have to train your brain to draw what you actually see, then break down references before drawing from memory, then observing references as you draw.

You just described doing a study, Captain Obvious. Literally everyone does that. What the fuck are you on about?

Anyway, you want a real thing that isn't emphasized enough, especially for beginners? Grinding ellipses.
It's shocking to me how so much beginner material just brushes off ellipses as "just a thing you draw" when constructing other shapes.
I think it more than deserves a dedicated exercise. And I'm not a beginner myself but this has always been a big pet peeve of mine.
