If there's grey tones, now that requires mixing colours and such, so rather than doing that, everything is kept black by suggesting different tones with the patterns instead.So using one colour saves on costs for the publisher, rather than saving the printer money, as printers don't really charge on amount of ink used (but they do charge for the number of different inks used), nor are printers editing people's work so that they use less ink (though such practice may have been common back in the days of stone lithography or woodcuts).
