You should have asked him if he acts like this for other artisan crafts.
I can buy a cheap factory vase from any local large store, and yet that doesn't lower the value of hand made pottery, nor suddenly make it fraud.
I can go watch a film for $15 or so, but that doesn't suddenly turn a more expensive live theatre play ticket into a scam.
I can buy a tv dinner, so should I ask why would anyone pay into the pyramid scheme that is a restaurant?
Likewise, just because AI can make images, doesn't mean there isn't still a perceived value in hand made art.
Also, the dude whinging about your stall is probably pro-business, so why is he interfering with the customers of a small independent business, and does he think that consumer are ignorant and unable to assess the value of your art themselves?

That said, even if he agreed with everything you said, chances are he would still hang around and chase off customers, because people are rarely willing to admit they were in the wrong in that moment, and will only do so in hindsight.
Life isn't some tv show, and no matter how brilliant and correct your argument is, the 'villain' isn't going to acknowledge that and just concede.

To the point of the thread though, I don't think hand made art is dead in any way, you just had one obnoxious schizo make it hard to browse your work. I also wonder if your work would actually attract those who would be interested in Traditional Art - Would pokemon fans actually buy a painting of Magneto? Would Vtuber Fans buy some random inked drawing of their fav Vtuber? Maybe it'd be good to try being more high-brow... though I can't pretend to understand the art market, so maybe my thoughts are quite wrong.
