Holograms should be reserved for auxiliary systems like power output or equipment management. The actual controls should be analog.
Rows of toggle switches you have to flick in sequence. A big button you slam with your fist. Sticks with a red button on top, with a cap you have to flip back to hit the button. All topped with those swinging arm things that control Big O's punches.
No because they're just lazy and done so animators don't have to animate an actual detailed cockpit. Like in Seed Freedom now all the cockpits are just empty voids with space background with pop up displays which is boring.
