You could arrange any rap song on piano if you wanted, it just wouldn't be very interesting most of the time. Any attempt to define rap as "not music" requires a definition of music that is deliberately contorted to exclude rap, but it is never a successful gambit because it always leaves out other things that make no sense. It isn't exactly an apt comparison since rap has an underlying rhythm of the music, which the lyrics are contorted to (imagine a given rap song and ask if the way words are being said reflect any sort of natural speech emphasis), whereas the meter of poetry is a product of natural rhythm of the words being spoken.
