Assuming you've already read the spec sheet and know what you are looking at, first, look at the 'problems.' Things not lining up, gaps, crooked screws, finish blems, cracks, loose parts, etc. If you can live with those then look next at what they did well. Play it unplugged and listen to what it sounds like naked. It should resonate and ring like a bell, and you should be able to feel the vibrations through the neck as well as the body. Last, plug it in and check the electronics are all functioning and quiet.
Ultimately if the guitar speaks to you you should listen to it beyond any 'quality' issues.

My first guitar was a Chinese no-brand strat copy, probably one of the worst guitars ever built. (I eventually ship-of-Theseus'ed that one several years later, now feels good).
Then a couple of years later I was gifted a very low-level metal-oriented Cort. Felt pretty good. I think it's kind of a shredder, but with a fixed bridge. Although it ended up trashed before I could make a full optimised use of it (intonation and action height etc. because the frets were already fucked). But I used it as a way to learn how to mod a guitar.

Now several years later, recently, I bought a Jackson Dinky that I modded to absolute perfection. That's what I'm comfortable with and that's what I was looking for. The specs were more important than the feel, but that turned out perfect.
Because I had picked up guitars from other dudes and I don't know now if they were trash already or if I wasn't good enough but it always felt wrong. Trying an Epiphone SG, trying a legit Les Paul, a Squier strat... Never felt as good as my own guitars.
But I assume at some point you get confident enough in your playing that you handle all those different guitars properly with a little warmup.

TLDR : So look in terms of specs the sound you're looking for and if it's suited to your playstyle. The guitar is what makes the sound, not your playing (lol), you should be comfortable playing anything and everything and in the end it's up to your preference.
