And yeah, the Himalayan/Scram 411 as well as the other anon sperged out about.

If you want to be a REAL hipster, you can get one of these things. If you're in the PNW, they're probably made right by you. Only real downside is that it's not carbed like it should be, but it's the "I'm having a midlife crisis with too much money and want a bike to tinker on" bike.

If you don't how to, feel like you could learn and retain the information then Motorcycle 1 seems decent. Being able to service your own brakes without killing yourself would allow you to break even within 2~3 jobs. And carburetors are becoming archaic so they'll become specialized tasks sooner or later.
Motorcycle 2 & 3 seem like they're be robbery for anyone who doesn't have the 'knack'.
