How do I actually get into professional wrestling? I've watched a couple episodes of RAW and some clips from other leagues but I just lose interest because there's too many names and storylines to keep track of.

Just keep watching and soon you'll know all of them and they'll become the friends you never had
Also, don't browse here or any other social media related to wrestling. It's much more fun when you don't see threads saying X sucks or Y has a fake injury and is winning the title at Z

Nah he's better off starting in like 04 or 05 if he plans on watching modern stuff. 97 is probably the best year ever, but it's too old school for first time watchers

Unironically, just watch Lucha Underground. It's ultra-compact wrestling, simplified, but still has all the appeal of weekly wrestling.
I wouldn't look into Japan yet if stories and characters are the selling point to you because that's handled very differently over there.
