this is just my take after being in both for a month each
i found koreans a lot more rude and cliquey
seoul had a lot more foreign influence than tokyo, you can see it especially in the food that's available and how much more english is present (and more competently written), also itaewon was full of blacks and muslims
every time i went to a bar in japan i was able to meet some local drinking buddies but struck out constantly in korea, and when i did meet some they weren't koreans
don't know shit about china but from my impression they're more isolated from the west so it should be easy if you're trying to use that to your advantage

Chinese by far is the language to learn, Mandarin to be specific. It has the most speakers by an order or magnitude, both because of the population of China itself but also because of the massive diaspora. It is also the best of the three to learn for business purposes since by far it has the biggest economy. Also China just mogs in terms of travel, there are so many cool places to visit, and if you can speak Chinese you will have a much better experience. South Korea and Japan are rapidly becoming westernised, they will probably all speak English as a second language in a couple of decades, same as how basically every young person in Europe speaks English. China is the least likely to westernise, so you get the most value out of learning the language, as even in decades time the standard of English among Chinese isn't that likely to increase much. The government is literally trying to supress western influence and boost Mandarin learning to tie the regions and Chinese minorities closer together.
